Bacon Wrapped Onion Rings

Ingredients:

  • 4 large sweet onions, cut into thick rings

  • 1 lb bacon slices (thin-sliced bacon works best)

  • 1/2 cup brown sugar

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)

  • Freshly ground black pepper, to taste

  • Toothpicks, soaked in water for 30 minutes

Instructions:

  1. Preheat Oven or Grill:

    • Preheat your oven to 375°F (190°C) or prepare a grill for indirect cooking.

  1. Prepare Onions:

    • Cut the onions into thick rings, separating the layers. Aim for about 1-inch rings.

  1. Wrap with Bacon:

    • Wrap each onion ring with a slice of bacon, securing the bacon with toothpicks. Place the toothpick through the bacon and into the onion to hold it in place.

  1. Make Seasoning Mix:

    • In a bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), and black pepper. Mix well.

  1. Coat with Seasoning:

    • Sprinkle the seasoning mix over the bacon-wrapped onion rings, making sure to coat them evenly.

  1. Bake or Grill:

    • If baking, place the bacon-wrapped onion rings on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the bacon is crispy.

    • If grilling, place the bacon-wrapped onion rings on the indirect side of the grill. Close the lid and grill for about 25-30 minutes or until the bacon is crispy.

  1. Optional: Broil for Extra Crispiness:

    • If you desire extra crispiness, you can place the bacon-wrapped onion rings under the broiler for the last couple of minutes.

  1. Serve:

    • Once done, remove the toothpicks and transfer the bacon-wrapped onion rings to a serving platter.

  1. Enjoy:
