Barbecue Chicken with Soba Noodles

Ingredients:

For the Barbecue Chicken:

4 boneless, skinless chicken breasts

1/2 cup barbecue sauce (homemade or high-quality store-bought)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon Dijon mustard

2 cloves garlic, minced

Salt and black pepper, to taste

1 tablespoon vegetable oil (for grilling)

For the Soba Noodles:

8 ounces soba noodles

1 tablespoon sesame oil

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon fresh ginger, grated

2 green onions, thinly sliced

Sesame seeds, for garnish

Fresh cilantro or parsley, for garnish

Instructions:

1. Marinate and Grill the Chicken:

In a bowl, mix together barbecue sauce, soy sauce, honey, Dijon mustard, minced garlic, salt, and black pepper.

Marinate chicken breasts in the barbecue mixture for at least 30 minutes.

Preheat the grill or grill pan over medium-high heat. Brush with vegetable oil.

Grill chicken breasts for 6-8 minutes per side or until fully cooked, basting with the marinade.

2. Cook the Soba Noodles:

Cook soba noodles according to package instructions. Drain and rinse under cold water to stop cooking.

In a bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, and grated ginger.

Toss the cooked soba noodles in the dressing until well coated.

3. Assemble the Dish:

Slice the grilled chicken breasts into thin strips.

Serve the sliced barbecue chicken on a bed of soba noodles.

Garnish with thinly sliced green onions, sesame seeds, and fresh cilantro or parsley.

4. Serve:

Arrange the Barbecue Chicken with Soba Noodles on individual plates or a serving platter.

Drizzle with any remaining barbecue sauce.

Serve immediately, offering extra sauce on the side.
