Honey, Lime & Sriracha Chicken Skewers with Avocado-Cilantro Dipping Sauce

For the Chicken Skewers:

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces

  • Zest and juice of 2 limes

  • 1/4 cup honey

  • 2 tablespoons soy sauce

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • Salt and black pepper to taste

  • Wooden or metal skewers, soaked if wooden

For the Avocado-Cilantro Dipping Sauce:

  • 2 ripe avocados

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup Greek yogurt

  • Juice of 1 lime

  • 1 clove garlic, minced

  • Salt and black pepper to taste

Instructions:
