Cheesy Tortellini and Sausage Bake
Ingredients:
1 lb (about 500g) cheese-filled tortellini
1 lb (about 450g) Italian sausage, casings removed
1 tablespoon olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 can (14 oz) diced tomatoes, drained
1 can (14 oz) tomato sauce
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and black pepper to taste
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Cook the Tortellini:
Cook the cheese-filled tortellini according to the package instructions until just al dente. Drain and set aside.
Cook the Sausage:
In a large oven-safe skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it into smaller pieces with a spoon. Cook until browned.
Add Aromatics:
Add chopped onion and minced garlic to the skillet. Sauté until the onion is softened.
Create the Tomato Sauce:
Stir in diced tomatoes, tomato sauce, dried oregano, and dried basil. Season with salt and black pepper. Simmer for about 5 minutes to let the flavors meld.
Combine Tortellini and Sauce:
Add the cooked tortellini to the skillet, tossing to coat in the sauce.
Top with Cheese:
Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the top.
Bake:
Transfer the skillet to the preheated oven and bake for about 20 minutes or until the cheese is melted and bubbly, and the edges are golden brown.
Garnish and Serve:
Remove from the oven and let it cool for a few minutes.
Garnish with fresh basil or parsley if desired.
Serve directly from the skillet.
