Cookie Butter PIe
Ingredients:
For the Crust:
1 1/2 cups cookie crumbs (speculoos or graham crackers)
1/3 cup unsalted butter, melted
1/4 cup granulated sugar
For the Filling:
1 1/2 cups cookie butter (such as Biscoff or Speculoos)
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 1/4 cups heavy cream, whipped to stiff peaks
For Topping (Optional):
Whipped cream
Cookie crumbs
Chocolate shavings or drizzle
Instructions:
For the Crust:
Prepare the Crust:
In a bowl, combine the cookie crumbs, melted butter, and granulated sugar. Press the mixture into the bottom and up the sides of a pie dish to form the crust.
Chill:
Place the crust in the refrigerator to chill while you prepare the filling.
For the Filling:
Prepare Cookie Butter Filling:
In a mixing bowl, whisk together the cookie butter, powdered sugar, and vanilla extract until smooth.
Fold in Whipped Cream:
Gently fold in the whipped cream until well combined. Be careful not to deflate the whipped cream.
Assembling the Pie:
Fill the Crust:
Pour the cookie butter filling into the prepared crust, spreading it evenly.
Chill:
Place the pie in the refrigerator to set for at least 4 hours or overnight.
