Doritos Casserole with Beef
Ingredients:
1 pound lean ground beef
1 onion, finely chopped
1 bell pepper, diced
1 packet taco seasoning mix
1 can (15 ounces) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 can (10 ounces) diced tomatoes with green chilies, undrained
1 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 bag (about 10 ounces) nacho cheese-flavored Doritos, crushed
Fresh cilantro, chopped (for garnish)
Sliced green onions (for garnish)
Sour cream (for serving)
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C).
Cook the Ground Beef:
In a large skillet over medium heat, cook the ground beef until browned. Add chopped onions and bell pepper, and cook until the vegetables are softened.
Season the Beef:
Stir in the taco seasoning mix and cook according to the package instructions.
Add Beans and Vegetables:
Add black beans, corn, and diced tomatoes with green chilies to the skillet. Mix well and let it simmer for a few minutes.
Layer the Casserole:
In a large casserole dish, spread a layer of crushed Doritos at the bottom.
Spoon half of the beef and vegetable mixture over the Doritos layer.
Spread half of the sour cream evenly over the beef mixture.
Sprinkle half of the shredded cheddar and Monterey Jack cheese over the sour cream.
Repeat the Layers:
Repeat the layering process with another layer of crushed Doritos, the remaining beef mixture, sour cream, and shredded cheeses.
Bake:
Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove from the oven and let it cool slightly. Garnish with chopped cilantro and sliced green onions.
Serve the Doritos Casserole with additional sour cream on the side.
