Doritos Casserole with Beef

Ingredients:

  • 1 pound lean ground beef

  • 1 onion, finely chopped

  • 1 bell pepper, diced

  • 1 packet taco seasoning mix

  • 1 can (15 ounces) black beans, drained and rinsed

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 can (10 ounces) diced tomatoes with green chilies, undrained

  • 1 cup sour cream

  • 1 cup shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1 bag (about 10 ounces) nacho cheese-flavored Doritos, crushed

  • Fresh cilantro, chopped (for garnish)

  • Sliced green onions (for garnish)

  • Sour cream (for serving)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Cook the Ground Beef:

    • In a large skillet over medium heat, cook the ground beef until browned. Add chopped onions and bell pepper, and cook until the vegetables are softened.

  1. Season the Beef:

    • Stir in the taco seasoning mix and cook according to the package instructions.

  1. Add Beans and Vegetables:

    • Add black beans, corn, and diced tomatoes with green chilies to the skillet. Mix well and let it simmer for a few minutes.

  1. Layer the Casserole:

    • In a large casserole dish, spread a layer of crushed Doritos at the bottom.

    • Spoon half of the beef and vegetable mixture over the Doritos layer.

    • Spread half of the sour cream evenly over the beef mixture.

    • Sprinkle half of the shredded cheddar and Monterey Jack cheese over the sour cream.

  1. Repeat the Layers:

    • Repeat the layering process with another layer of crushed Doritos, the remaining beef mixture, sour cream, and shredded cheeses.

  1. Bake:

    • Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.

  1. Garnish and Serve:

    • Remove from the oven and let it cool slightly. Garnish with chopped cilantro and sliced green onions.

    • Serve the Doritos Casserole with additional sour cream on the side.
