Gourmet Pecan Pie

Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour

  • 1/2 cup unsalted butter, cold and cut into small pieces

  • 1/4 cup granulated sugar

  • 1/4 teaspoon salt

  • 2-3 tablespoons ice water

For the Pecan Filling:

  • 1 1/2 cups pecan halves

  • 3 large eggs

  • 1 cup dark corn syrup

  • 1/2 cup pure maple syrup

  • 1 cup packed light brown sugar

  • 1/2 cup unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

Instructions:

For the Pie Crust:

  1. Prepare the Crust:

    • In a food processor, combine the flour, sugar, and salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.

  1. Add Ice Water:

    • With the food processor running, add ice water one tablespoon at a time until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  1. Roll Out the Crust:

    • On a floured surface, roll out the chilled dough to fit a 9-inch pie dish. Transfer the rolled-out dough to the pie dish, trim any excess, and crimp the edges. Place the crust in the refrigerator while you prepare the filling.

For the Pecan Filling:

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).

  1. Toast Pecans:

    • Spread the pecan halves on a baking sheet and toast in the preheated oven for about 8-10 minutes or until fragrant. Be careful not to burn them. Set aside.

  1. Prepare Filling:

    • In a large bowl, whisk together the eggs, dark corn syrup, maple syrup, brown sugar, melted butter, vanilla extract, and salt until well combined.

  1. Add Pecans:

    • Gently fold in the toasted pecan halves.

  1. Assemble and Bake:

    • Pour the pecan filling into the prepared pie crust. Place the pie on a baking sheet to catch any potential spills. Bake in the preheated oven for 45-50 minutes or until the center is set.

  1. Cool:

    • Allow the pie to cool completely before slicing. This allows the filling to set.

  1. Serve:

    • Serve the gourmet pecan pie slices with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
