Gourmet Pecan Pie
Ingredients:
For the Pie Crust:
1 1/4 cups all-purpose flour
1/2 cup unsalted butter, cold and cut into small pieces
1/4 cup granulated sugar
1/4 teaspoon salt
2-3 tablespoons ice water
For the Pecan Filling:
1 1/2 cups pecan halves
3 large eggs
1 cup dark corn syrup
1/2 cup pure maple syrup
1 cup packed light brown sugar
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions:
For the Pie Crust:
Prepare the Crust:
In a food processor, combine the flour, sugar, and salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
Add Ice Water:
With the food processor running, add ice water one tablespoon at a time until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Roll Out the Crust:
On a floured surface, roll out the chilled dough to fit a 9-inch pie dish. Transfer the rolled-out dough to the pie dish, trim any excess, and crimp the edges. Place the crust in the refrigerator while you prepare the filling.
For the Pecan Filling:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Toast Pecans:
Spread the pecan halves on a baking sheet and toast in the preheated oven for about 8-10 minutes or until fragrant. Be careful not to burn them. Set aside.
Prepare Filling:
In a large bowl, whisk together the eggs, dark corn syrup, maple syrup, brown sugar, melted butter, vanilla extract, and salt until well combined.
Add Pecans:
Gently fold in the toasted pecan halves.
Assemble and Bake:
Pour the pecan filling into the prepared pie crust. Place the pie on a baking sheet to catch any potential spills. Bake in the preheated oven for 45-50 minutes or until the center is set.
Cool:
Allow the pie to cool completely before slicing. This allows the filling to set.
Serve:
Serve the gourmet pecan pie slices with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
