Lemon Bars
Ingredients:
For the Crust:
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt
For the Lemon Filling:
4 large eggs
2 cups granulated sugar
1/3 cup all-purpose flour
1 cup freshly squeezed lemon juice (about 4-6 lemons)
Zest of 1-2 lemons
Powdered sugar, for dusting (optional)
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease or line a 9x13-inch baking pan.
For the Crust:
Prepare Crust:
In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add Dry Ingredients:
Gradually add the flour and salt, mixing until just combined. The dough will be crumbly.
Press Into Pan:
Press the crust mixture evenly into the bottom of the prepared baking pan.
Bake Crust:
Bake the crust in the preheated oven for about 20 minutes or until it's lightly golden. Remove from the oven and set aside.
For the Lemon Filling:
Prepare Filling:
In a separate bowl, whisk together the eggs, granulated sugar, and flour until well combined.
Add Lemon Juice and Zest:
Stir in the freshly squeezed lemon juice and lemon zest until the mixture is smooth.
Pour Over Baked Crust:
Pour the lemon filling over the baked crust.
Bake Again:
Bake in the oven for an additional 20-25 minutes or until the lemon filling is set and the edges are lightly golden.
Cool:
Allow the lemon bars to cool completely in the pan on a wire rack.
Chill (Optional):
For easier cutting, you can refrigerate the lemon bars for a couple of hours before slicing.
Dust with Powdered Sugar (Optional):
Dust the top of the cooled lemon bars with powdered sugar before serving, if desired.
Slice and Serve:
Once cooled and set, cut into squares and serve.
