Lemon Bars

Ingredients:

For the Crust:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1/2 cup granulated sugar

  • 2 cups all-purpose flour

  • 1/4 teaspoon salt

For the Lemon Filling:

  • 4 large eggs

  • 2 cups granulated sugar

  • 1/3 cup all-purpose flour

  • 1 cup freshly squeezed lemon juice (about 4-6 lemons)

  • Zest of 1-2 lemons

  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C). Grease or line a 9x13-inch baking pan.

For the Crust:

  1. Prepare Crust:

    • In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.

  1. Add Dry Ingredients:

    • Gradually add the flour and salt, mixing until just combined. The dough will be crumbly.

  1. Press Into Pan:

    • Press the crust mixture evenly into the bottom of the prepared baking pan.

  1. Bake Crust:

    • Bake the crust in the preheated oven for about 20 minutes or until it's lightly golden. Remove from the oven and set aside.

For the Lemon Filling:

  1. Prepare Filling:

    • In a separate bowl, whisk together the eggs, granulated sugar, and flour until well combined.

  1. Add Lemon Juice and Zest:

    • Stir in the freshly squeezed lemon juice and lemon zest until the mixture is smooth.

  1. Pour Over Baked Crust:

    • Pour the lemon filling over the baked crust.

  1. Bake Again:

    • Bake in the oven for an additional 20-25 minutes or until the lemon filling is set and the edges are lightly golden.

  1. Cool:

    • Allow the lemon bars to cool completely in the pan on a wire rack.

  1. Chill (Optional):

    • For easier cutting, you can refrigerate the lemon bars for a couple of hours before slicing.

  1. Dust with Powdered Sugar (Optional):

    • Dust the top of the cooled lemon bars with powdered sugar before serving, if desired.

  1. Slice and Serve:

    • Once cooled and set, cut into squares and serve.
