Grilled BBQ Chicken with Maple-Bourbon Glaze

For the BBQ Chicken:

Ingredients:

  • 4 bone-in, skin-on chicken thighs

  • 4 bone-in, skin-on chicken drumsticks

  • Salt and black pepper to taste

  • 1 tablespoon smoked paprika

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon cayenne pepper (adjust to taste)

  • Olive oil for brushing

For the Maple-Bourbon Glaze:

Ingredients:

  • 1/2 cup high-quality barbecue sauce

  • 1/4 cup maple syrup

  • 2 tablespoons bourbon

  • 2 tablespoons Dijon mustard

  • 2 cloves garlic, minced

  • Salt and black pepper to taste

For Garnish:

  • Fresh chopped parsley or cilantro

  • Lemon or lime wedges

Instructions:

For the BBQ Chicken:

1.     Preheat Grill:

    • Preheat your grill to medium-high heat.

2.     Season Chicken:

    • Pat the chicken thighs and drumsticks dry with paper towels. Season with salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.

3.     Grill Chicken:

    • Brush the chicken pieces with olive oil to prevent sticking. Grill the chicken over medium-high heat, turning occasionally, until the internal temperature reaches 165°F (74°C) and the skin is crispy and well-charred, about 25-30 minutes.

For the Maple-Bourbon Glaze:

1.     Prepare Glaze:

    • In a small saucepan over medium heat, combine barbecue sauce, maple syrup, bourbon, Dijon mustard, minced garlic, salt, and black pepper. Bring to a simmer and let it cook for 5-7 minutes, stirring occasionally, until the glaze thickens.

2.     Glaze Chicken:

    • Brush the grilled chicken with the Maple-Bourbon Glaze during the last 5-10 minutes of cooking, allowing the glaze to caramelize on the chicken.

To Serve:

1.     Garnish:

    • Place the grilled BBQ chicken on a serving platter. Garnish with fresh chopped parsley or cilantro.

2.     Serve with Citrus Wedges:

    • Serve the BBQ chicken with lemon or lime wedges on the side for a burst of citrus freshness.
