Peanut Butter Wafer Cookie
Ingredients:
1 cup all-purpose flour
1/2 cup cornstarch
1/2 cup unsalted butter, softened
1/4 cup creamy peanut butter
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Pinch of salt
1/4 cup whole milk
Instructions:
1. Preheat and Prepare:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Cream Butter, Peanut Butter, and Sugar:
In a large mixing bowl, cream together the softened butter, peanut butter, and sugar until light and fluffy.
3. Add Egg and Vanilla:
Add the egg and vanilla extract to the butter-peanut butter mixture. Beat until well combined.
4. Mix Dry Ingredients:
In a separate bowl, whisk together the flour, cornstarch, and a pinch of salt.
5. Combine Wet and Dry:
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
6. Add Milk:
Pour in the milk and continue to mix until the dough comes together. The dough should be smooth and soft.
7. Roll and Cut:
On a lightly floured surface, roll out the dough to about 1/8-inch thickness. You may want to divide the dough into two portions for easier rolling.
8. Cut into Shapes:
Use cookie cutters to cut the dough into desired shapes. Place the cutouts on the prepared baking sheets, leaving a little space between each.
9. Bake:
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Keep an eye on them to prevent over-baking.
10. Chill:
Allow the peanut butter wafer cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
11. Serve or Store:
Once cooled, serve the peanut butter wafer cookies as they are or use them in various desserts. Store any leftovers in an airtight container to maintain their crispiness.
