Peruvian-Style Roast Chicken with Aji Verde Sauce
Ingredients:
For the Roast Chicken:
1 whole chicken (about 4-5 pounds)
4 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon dried oregano
1 teaspoon ground coriander
1 teaspoon smoked paprika
Salt and black pepper to taste
Juice of 2 limes
2 tablespoons vegetable oil

1 cup mayonnaise
1 cup fresh cilantro leaves, tightly packed
1/2 cup fresh parsley leaves, tightly packed

2 cloves garlic
2 tablespoons green onions, chopped
2 tablespoons lime juice

Instructions:
For the Roast Chicken:
1. Prepare the Marinade:
In a bowl, combine minced garlic, ground cumin, paprika, dried oregano, ground coriander, smoked paprika, salt, black pepper, lime juice, and vegetable oil.
2. Marinate the Chicken:
