Pork Gyro
Ingredients:
For the Pork Marinade:
1.5 lbs (680g) porkloin, thinly sliced
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon smoked paprika
Juice of 1 lemon
Salt and black pepper, to taste
For the Tzatziki Sauce:
1 cup Greek yogurt
1 cucumber, peeled, seeded, and finely chopped
2 cloves garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon olive oil
1 tablespoon red wine vinegar
Salt and black pepper, to taste
For Assembling the Gyro:
Flatbreads or pita wraps
Sliced tomatoes
Sliced red onions
Sliced cucumbers
Fresh parsley, chopped
Lemon wedges for serving
Instructions:
Marinating the Pork:
Prepare the Marinade:
In a bowl, combine olive oil, minced garlic, dried oregano, ground cumin, smoked paprika, lemon juice, salt, and black pepper.
Marinate the Pork:
Place the thinly sliced steak in a zip-top bag or shallow dish. Pour the marinade over the steak, ensuring each piece is well-coated. Marinate for at least 30 minutes, or refrigerate for up to 4 hours.
Prepare the Tzatziki Sauce:

In a bowl, combine Greek yogurt, chopped cucumber, minced garlic, fresh dill, olive oil, red wine vinegar, salt, and black pepper. Mix well and refrigerate until ready to use.
