Pork Gyro

Ingredients:

For the Pork Marinade:

  • 1.5 lbs (680g) porkloin, thinly sliced

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • Juice of 1 lemon

  • Salt and black pepper, to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt

  • 1 cucumber, peeled, seeded, and finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon fresh dill, chopped

  • 1 tablespoon olive oil

  • 1 tablespoon red wine vinegar

  • Salt and black pepper, to taste

For Assembling the Gyro:

  • Flatbreads or pita wraps

  • Sliced tomatoes

  • Sliced red onions

  • Sliced cucumbers

  • Fresh parsley, chopped

  • Lemon wedges for serving

Instructions:

Marinating the Pork:

  1. Prepare the Marinade:

    • In a bowl, combine olive oil, minced garlic, dried oregano, ground cumin, smoked paprika, lemon juice, salt, and black pepper.

  1. Marinate the Pork:

    • Place the thinly sliced steak in a zip-top bag or shallow dish. Pour the marinade over the steak, ensuring each piece is well-coated. Marinate for at least 30 minutes, or refrigerate for up to 4 hours.

Prepare the Tzatziki Sauce:

  1. Make the Tzatziki Sauce:

    • In a bowl, combine Greek yogurt, chopped cucumber, minced garlic, fresh dill, olive oil, red wine vinegar, salt, and black pepper. Mix well and refrigerate until ready to use.

Cook the Pork:

    • Heat a grill pan or skillet over medium-high heat.

    • Cook the marinated pork slices for 2-3 minutes on each side until they reach your desired level of doneness.

Assemble the Gyro:

  1. Warm the Flatbreads or Pita:

    • Heat the flatbreads or pita wraps in the oven or on the stovetop.

    • Spread a generous amount of Tzatziki sauce on the warmed flatbread.

    • Add a portion of the cooked steak slices.

    • Top with sliced tomatoes, red onions, and cucumbers.

    • Sprinkle with fresh parsley.

    • Roll the gyro tightly and secure with toothpicks if needed.

    • Serve the Pork Gyro with lemon wedges on the side.
