Protein Pancakes with Chocolate Chips and Peanut Butter

Ingredients:

Dry Ingredients:

1 cup old-fashioned oats

1 scoop (about 30g) vanilla protein powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Wet Ingredients:

1 cup Greek yogurt

2 large eggs

1/4 cup milk (dairy or plant-based)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

Add-ins:

1/3 cup chocolate chips (dark or semi-sweet)

1/4 cup creamy peanut butter (warmed for drizzling)

Instructions:

1. Blend Oats:

Place oats in a blender or food processor and blend until you achieve a fine flour-like consistency.

2. Mix Dry Ingredients:

In a large bowl, combine the oat flour, protein powder, baking powder, baking soda, and salt.

3. Mix Wet Ingredients:

In a separate bowl, whisk together Greek yogurt, eggs, milk, honey or maple syrup, and vanilla extract.

4. Combine Wet and Dry:

Add the wet ingredients to the dry ingredients and stir until well combined.

5. Add Chocolate Chips:

Gently fold in the chocolate chips into the pancake batter.

6. Cook Pancakes:

Preheat a griddle or non-stick skillet over medium heat. Grease it lightly with cooking spray or a bit of butter.

Pour 1/4 cup portions of batter onto the griddle. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.

7. Drizzle with Peanut Butter:

Warm the peanut butter slightly (microwave for a few seconds) until it's easily drizzled. Drizzle over the pancakes.

8. Serve:

Stack the protein pancakes on a plate and serve warm.

Optional Tips:

If the batter is too thick, you can add a little more milk to achieve your desired consistency.

Top the pancakes with additional chocolate chips, sliced bananas, or a sprinkle of chopped nuts for extra indulgence.

Consider adding a pinch of cinnamon for added flavor.
