Grilled Squid with Parsley
Ingredients:
1 lb (about 450g) cleaned squid tubes and tentacles
2 tablespoons olive oil
3 cloves garlic, minced
Zest and juice of 1 lemon
1 teaspoon red pepper flakes (adjust to taste)
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. Prepare the Squid:
If the squid is not already cleaned, remove the skin, beak, and internal parts. Rinse under cold water and pat dry with paper towels.
Score the squid tubes in a crisscross pattern on one side to help them cook evenly.
2. Marinate the Squid:
In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes, salt, and black pepper to create the marinade.
Place the cleaned squid in a shallow dish, and coat them with the marinade. Ensure the squid is well covered, and let it marinate for at least 30 minutes.
3. Preheat the Grill:
Preheat your grill to medium-high heat.
4. Grill the Squid:
Remove the squid from the marinade and thread them onto skewers for easier grilling.
Grill the squid for about 2-3 minutes per side, or until they are opaque and have grill marks. Be careful not to overcook, as squid can become tough.
5. Garnish:
Once the squid is grilled, transfer it to a serving plate.
Sprinkle with fresh chopped parsley for a burst of freshness.
6. Serve:
Serve the grilled squid immediately, with additional lemon wedges on the side if desired.
Optional Tips:
Drizzle a bit of extra olive oil over the grilled squid just before serving for added richness.
