Steak Pizzaiola

Ingredients:

  • 2 high-quality sirloin or ribeye steaks (about 8 oz each)

  • 2 tablespoons olive oil

  • Salt and black pepper, to taste

  • 1 tablespoon unsalted butter

  • 4 cloves garlic, minced

  • 1 teaspoon red pepper flakes (adjust to taste)

  • 1 cup cherry tomatoes, halved

  • 1/2 cup black or Kalamata olives, pitted and halved

  • 1/4 cup capers, drained

  • 1 cup high-quality tomato sauce

  • 1/2 cup dry red wine

  • 1 teaspoon dried oregano

  • 1/4 cup fresh basil, chopped

  • Grated Parmesan cheese for serving

Instructions:

  1. Prepare the Steaks:

    • Preheat your oven to 400°F (200°C).

    • Season the steaks generously with salt and pepper.

    • In an oven-safe skillet, heat the olive oil over medium-high heat.

  1. Sear the Steaks:

    • Sear the steaks for about 2-3 minutes on each side until they develop a golden-brown crust.

    • Transfer the skillet to the preheated oven and cook the steaks to your desired doneness. For medium-rare, it should take around 5-7 minutes.

  1. Rest the Steaks:

    • Once done, remove the steaks from the oven and let them rest on a plate while you prepare the sauce.

  1. Prepare the Sauce:

    • In the same skillet, add butter, minced garlic, and red pepper flakes. Sauté for 1-2 minutes until the garlic is fragrant but not browned.

    • Add the halved cherry tomatoes, olives, and capers. Cook for another 2-3 minutes until the tomatoes start to soften.

  1. Deglaze and Simmer:

    • Pour in the red wine to deglaze the pan, scraping up any browned bits from the bottom.

    • Add the tomato sauce and dried oregano. Stir well and let the sauce simmer for about 5-7 minutes to allow the flavors to meld.

  1. Finish the Dish:

    • Place the rested steaks back into the skillet, coating them with the sauce. Simmer for an additional 2-3 minutes until the steaks are heated through.

    • Sprinkle fresh basil over the top.

  1. Serve:

    • Plate the steaks and spoon the Pizzaiola sauce over them.

    • Garnish with grated Parmesan cheese.

This recipe combines the richness of the steak with the savory and tangy notes of the Pizzaiola sauce, creating a sophisticated and flavorful dish that could be worthy of a Michelin star. Enjoy your culinary masterpiece!
