Biscuit Strawberry Shortcake
Ingredients:
For the Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
1/2 cup unsalted butter, cold and cut into small cubes
3/4 cup milk
1 teaspoon vanilla extract
For the Strawberry Filling:
1 1/2 pounds fresh strawberries, hulled and sliced
1/4 cup granulated sugar (adjust to taste)
1 teaspoon vanilla extract
For Whipped Cream:
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions:
For the Biscuits:
Preheat Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Combine Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
Cut in Butter:
Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Add Wet Ingredients:
Pour in the milk and vanilla extract. Stir until just combined, being careful not to overmix.
Form Biscuits:
Turn the dough out onto a floured surface and gently pat it into a rectangle, about 1/2 inch thick. Use a biscuit cutter to cut out rounds.
Bake:
Place the biscuits on the prepared baking sheet and bake in the preheated oven for 12-15 minutes or until they are golden brown. Remove from the oven and let them cool.

Slice Biscuits:
Slice the cooled biscuits in half horizontally.
Layering:
Place a spoonful of the macerated strawberries on the bottom half of each biscuit, followed by a dollop of whipped cream. Top with the other half of the biscuit.
